Seven days across Georgia - Tbilisi, Mtskheta, Kazbegi, Uplistsikhe and the Kakheti wine country - with a guide throughout, three Georgian dinners and a tasting at three wineries. Georgia is small enough that a week covers it properly, and this itinerary is routed to do that rather than to circle back on itself. Two days in Tbilisi cover the old town, the sulfur baths in Abanotubani and a cable car up to Narikala Fortress. From there the tour moves out in three directions. Mtskheta was the country's capital for centuries and holds Svetitskhoveli Cathedral and the hilltop Jvari Monastery, both UNESCO-listed. Kazbegi is the mountain day - Gergeti Trinity Church standing alone below Mount Kazbek, at the far end of the Georgian Military Highway through the Caucasus. Uplistsikhe is older than either: a city carved into the rock, inhabited from roughly the first millennium BC. Kakheti is the wine, and it is not incidental. Georgia has been making wine in clay qvevri for some 8,000 years, and the tasting covers three wineries rather than one. A Georgian cooking class and three dinners with wine are included. Accommodation is four-star for all six nights, transport is an air-conditioned vehicle, and every entrance fee is covered. The season runs April to October; the Kazbegi road is a mountain pass and is best avoided outside it.

Arrival in Tbilisi

Day 2
Tbilisi: the Old Town and Narikala Fortress
Breakfast and dinner includedA full day in Tbilisi with your guide. Walk through the Old Town's lanes of carved wooden balconies to Metekhi Church on its cliff above the Mtkvari, then take the cable car up to Narikala Fortress, which has watched over the city since the fourth century. Along the ridge stands the Mother of Georgia, holding a bowl of wine for guests and a sword for enemies. Below, in Abanotubani, the sulfur baths sit under their brick domes; a soak in one of the bathhouses can be added. In the evening, the first of the three Georgian dinners, with wine.

Day 3
Mtskheta and a Georgian cooking class
Breakfast includedA short drive out of Tbilisi to Mtskheta, capital of the old kingdom of Iberia, where the Aragvi and Mtkvari rivers meet. Jvari Monastery, built in the sixth century, stands on the hill above the confluence; Svetitskhoveli Cathedral, in the town below, has been the heart of the Georgian church for a thousand years. Both are part of a UNESCO World Heritage Site. In the afternoon, the cooking class: Georgian dishes such as khachapuri and khinkali, made by hand, and you eat what you make.

Day 4
Kazbegi and the Georgian Military Highway
Breakfast includedA long day in the Caucasus. The Georgian Military Highway climbs north past Ananuri, a fortress above the Zhinvali reservoir, and over the Jvari Pass at nearly 2,400 metres to Stepantsminda. Above the town, Gergeti Trinity Church stands alone on a ridge at 2,170 metres, below the glaciers of Mount Kazbek, which rises to over 5,000 metres. Return to Tbilisi in the evening. Cloud can hide the mountain, and the pass occasionally closes in bad weather.

Kakheti: Bodbe, Sighnaghi and three wineries
Breakfast and dinner includedEast into Kakheti, the wine country. Bodbe Monastery, where St Nino, who brought Christianity to Georgia, is buried, looks out over the Alazani Valley. Sighnaghi, a walled hilltop town, is known as the City of Love for its wedding registry, open around the clock. Through the day, tastings at three wineries, including wine made the Georgian way in clay qvevri buried in the ground, a method UNESCO lists as intangible heritage. In the evening, the second Georgian dinner, with wine.

Uplistsikhe, the cave city
